Requirements

Responsibilities:

  • Responsible for the preparation and presentation of cold dishes, such as appetizers, salads, cold platters, dressings, and terrines.
  • Ensuring the freshness and quality of all products used.
  • Creative design of buffets in the area of cold cuisine.
  • Working closely with other kitchen staff (saucier, entremetier, patissier) to guarantee a harmonious overall menu.
  • Independent organization of the work area including mise en place.
  • Responsibility for the proper storage and processing of food, particularly with regard to hygiene and HACCP standards.
  • Support in the preparation of menu and buffet suggestions for cold dishes.
  • Checking goods and carrying out quality controls.
  • Assisting with the training and induction of kitchen staff and trainees.

Requirements:

  1. Professional experience:
    • Completed training as a chef or cook.
    • Professional experience in the position of a Gardemanger or in a comparable position in the upscale gastronomy or hotel industry.
    • Experience in the preparation of cold dishes and buffets.
  2. Professional qualifications:
    • Excellent knowledge of modern and classic cold food preparation methods.
    • Sound knowledge of seasonal and regional cuisine as well as international cuisine.
    • Confident handling of hygiene standards (HACCP) and their implementation.
  3. Personal skills:
    • Creativity and attention to detail in the preparation and presentation of dishes.
    • Ability to work under pressure and flexibility, especially during busy periods.
    • Ability to work in a team and a cooperative approach - collaboration with other kitchen positions is essential.
    • Initiative and the ability to work independently.
    • Reliability and punctuality.
  4. Language skills:
    • Good knowledge of German to be able to communicate with the team and guests.
    • Basic knowledge of English an advantage.
  5. Soft Skills:
    • Passion for high-quality food and cold cuisine.
    • Attention to detail and high quality standards.
    • Ability to work in a team and enjoy working in a committed, international kitchen team.
    • Friendly and professional demeanor.
